Turkey Egg Roll in a Bowl


I love a simple, throw in a pan dinner throughout the week and this vegetable forward dish was just that!


Ingredients:


- 1 lb lean ground turkey


- 1 Tbsp olive oil


- 1 packet Trader Joe’s Cole slaw mix


- 2 cups shredded carrot


- 1 packet Trader Joe’s shelled edamame


- 1 bag frozen Trader Joe’s cauliflower stir fry rice mix


- Green onion, thinly sliced


- Sesame seeds


For the sauce:


- 1/3 cup coconut aminos


- 2 Tbsp rice vinegar


- 1 Tbsp sriracha


- 1 Tbsp fresh grated ginger


- 3 cloves garlic


- Onion powder, garlic powder, salt, pepper (I can’t be bothered to measure spices)


Method:


1. Add the olive oil to your skillet and heat to medium high


2. Add in the turkey and cook until browned


3. While the turkey is cooking, mix together your sauce ingredients


4. Add in the coleslaw mix, edamame, carrots, and stir fry mix


5. Add in the sauce and cook for about 7 minutes until everything is soft and well combined


6. Top with fresh green onion, sesame seeds, and more sriracha as desired
