Simple Banana Oatmeal Cookies



I first made these cookies during COVID when I really started cooking for fun! They are so simple, with only 4 ingredients. I love to pair these with some whipped cream or ice cream for dessert. They would also make a great breakfast cookie with a cup of coffee. These cookies are gluten-free and made with oats. This recipe could easily be modified to use any nut butter as well as dairy-free chocolate chips to make them dairy-free.




For the cookies:

  • 2 spotty bananas

  • 4 tbsp almond butter

  • 1 cup rolled oats

  • 1 tsp cinnamon

  • ½ cup choc chips/cacao nibs

Method:

  1. Mash the two bananas in a medium mixing bowl until smooth

  2. Add in the almond butter, oats, cinnamon

  3. Fold in the chocolate Chips

  4. Using a small scooper, roll the dough into small balls

  5. Cook @350 for 18-20 min
