I first made these cookies during COVID when I really started cooking for fun! They are so simple, with only 4 ingredients. I love to pair these with some whipped cream or ice cream for dessert. They would also make a great breakfast cookie with a cup of coffee. These cookies are gluten-free and made with oats. This recipe could easily be modified to use any nut butter as well as dairy-free chocolate chips to make them dairy-free.
For the cookies:
2 spotty bananas
4 tbsp almond butter
1 cup rolled oats
1 tsp cinnamon
½ cup choc chips/cacao nibs
Method:
Mash the two bananas in a medium mixing bowl until smooth
Add in the almond butter, oats, cinnamon
Fold in the chocolate Chips
Using a small scooper, roll the dough into small balls
Cook @350 for 18-20 min
