Reeses-Inspired Cookie Dough Balls

Full transparency, these were supposed to be peanut butter cookies. I completely messed up the cookie recipe and burned them to a crisp. Good news is, I am working on a new peanut butter cookie recipe and in the mean time I made these delish edible cookie dough balls! They contain no eggs. I like to store these in the fridge and keep them for a snack or post dinner treat.

Makes: 9-12 balls

Ingredients:

  • ¾ cup natural peanut butter

  • 1 cup oat flour (AP flour will make these too dry)

  • 3 tbsp coconut oil

  • ⅓ cup maple syrup or honey

  • Pinch of coarse sea salt

  • ⅓-½ cup chocolate chunks

Method:

1. Combine all of the ingredients in a bowl and mix thoroughly until a batter forms (you may need to add more syrup or flour depending on the consistency)

2. Mix in the chocolate

3. Roll the batter into small cookie dough balls about 1 inch in width

4. Store in the fridge!
