Perfect Pickled Onions

Pickled onions are a staple in my fridge. I genuinely think they elevate any meal! Fermented foods are the most amazing foods for our gut health. These foods benefit the good bacteria in our gut and elevate the microbiome. I love consuming at least one fermented food item per day whether it is pickled onions, kimchi, sourdough, kombucha, etc.

Serves: 8-10

Ingredients:

  • 1 cup apple cider vinegar

  • 1 cup warm water

  • 1 tbsp sugar, maple syrup, or honey

  • Pinch of salt

  • 1 medium red onion, thinly sliced

Method: 1. Heat all of the ingredients, minus the onion, over low-medium heat 2. Using a mandoline or knife, cut the onion into thin strips. 3. After letting the liquid mixture heat for about 5 minutes, combine the brine and the onions in a large jar or Tupperware. 4. Allow the jar to sit on the counter until room temperature, and then store your pickled onions in the fridge.
