I made this super quick and easy dinner with my roommates and they were so impressed! It can be so intimidating to get into cooking especially because most people are not looking to spend hours in the kitchen making dinner. This recipe is perfect for when you want something delicious, nutritious, and easy for yourself or to host. I adapted the recipe from lifemadesimple and changed it up to make it more my taste! I also used a mustard honey marinade for the chicken which was to die for!
Ingredients
For the salad:
- 1/2-3/4 bag arugula
- 1 1/2 cups orzo
- 3 tbsp chopped sun dried tomatoes
- 1/4 cups dried cranberries
- 1/4 cups pumpkin seeds (aka pepitas)
- 3/4 log herbed goat cheese
- Salt and Pepper
For the dressing:
- 1/4 cup olive oil
- 1/2 lemon, juiced
- 1 tsp dijon mustard
- Light squeeze of honey (about 1 tsp)
- 1/2 tsp dried basil
- 1 clove garlic, minced
- 1/2 shallot, finely chopped
- Salt and Pepper to taste
For the chicken:
- Chicken breast tenders
- Salt and pepper
- Olive oil
- Turmeric
- Paprika
- Garlic powder
- Honey
- Dijon Mustard
Method:
- Marinade the chicken for an hour or more in the fridge
- Combine the salad ingredients in a large bowl while the orzo cooks
- Once cooked, let the orzo cool
- Cook the chicken using your preferred method (I prefer stovetop at medium high heat)
= Combine the orzo, salad, and dressing and assemble your bowl!
