If you are looking for a simple recipe, make this! This lemon orzo pasta salad, was the easiest and most delicious recipe that I meal-prepped at the beginning of the week. This recipe stays well in the fridge for about 4-5 days and maintains great flavor. The fresh lemon and herbs give it such a fun flavor. This dish would also be perfect to bring to a potluck or as a side dish to some fish!
Serves: 6-7
Ingredients:
1 ½ cups orzo
1 English cucumber, finely chopped
1 can garbanzo beans, drained and rinsed
¾ cup mint, finely chopped
¾ cup basil, finely chopped
½ red onion, finely chopped
1 cup spinach, chopped
⅓ cup goat cheese
¼ cup olive oil
¼ cup lemon juice
Pinch of salt and pepper
Method:
1.Cook the orzo according to package instructions
2.Chop all of your veggies (onion, herbs, spinach, etc) and add to a medium-large mixing bowl
3.Once your orzo is cooked, drain the pasta and run under cold water until cooled
4.Add the orzo and drained chickpeas to your bowl of veggies, and add the cheese, olive oil, lemon, and seasonings.
5.Mix well to combine and add more lemon and seasonings as necessary.
