Indulgent Strawberry Cake with Cream Cheese Frosting

My sister's birthday was this week, and I wanted to celebrate by baking her the most delicious, indulgent strawberry cake. I brought this to her couple supper club, and luckily it was a huge hit! The mix of fresh strawberry flavor with the thick cream cheese frosting makes this the most amazing spring treat.

Serves: 12-18


For the Cake:

¾ cup oil

½ cup 1% buttermilk

½ cup Greek yogurt

3 eggs

1 ½ cups sugar

2 ½ cups all-purpose flour (or cake flour)

1 tsp baking powder

1 tsp baking soda

1 tbsp vanilla extract

1 tsp salt

¾ cup pureed strawberries (or strawberry jam)

1 cup sliced strawberries


For the Frosting:

1 block of cream cheese

½ cup unsalted butter, softened

3 ½ cups powdered sugar

¼ cup pureed strawberries


Method:

1. Preheat your oven to 350 degrees F and grease 2, 8-inch round cake pans, line the bottom with parchment paper, then spray with cooking oil

2. In a large bowl, beat (with a handheld mixer or stand mixer) the vegetable oil, egg, yogurt, sugar, buttermilk, and vanilla. Gently add the flour, baking soda and baking powder, and salt. Once combined, stir in the pureed strawberries (or jam) until lightly combined (should be streaks).

3. Pour the batter evenly into the two pans and cook for about 25 minutes or until cooked through (depending on your oven, this time may range by about 10 min)


To make the frosting:

1. Puree your fresh strawberries until you have ¼ cup pureed strawberries

B2. eat the cream cheese and butter for about 2 minutes.

3. Mix in one cup at a time of powdered sugar. After 2 cups, mix in the strawberry puree. Then, continue to add your powdered sugar until you reach your desired consistency.

4. Once your cake is COMPLETELY cool, frost the top of each layer and top with fresh strawberries, etc.
