Gut-Loving Chickpea Blondies

Serves: 8-10 slices

Ingredients:

  • 2 cans garbanzo beans

  • 1 cup natural peanut butter

  • ⅔ cup maple syrup

  • 1 Tbsp Vanilla bean paste (or vanilla extract)

  • 1 Tsp baking soda

  • Pinch of salt

  • ½ cup chocolate chips

Method

  1. Preheat the oven to 350F

  2. Combine the garbanzo beans, peanut butter, maple syrup, vanilla, baking soda, and salt in a large food processor or blender. 

  3. Blend until a thick dough forms. 

  4. Fold in half of the chocolate chips. 

  5. Transfer to a greased or lined baking dish

  6. Top with additional chocolate chips

  7. Bake for 35-40 minutes

  8. Enjoy!
