This pasta salad is full of colorful veggies and tons of healthy nutrients! I loved making this on Monday to have for lunch or dinner throughout the week. Honestly, it tastes great cold or warm. The dressing uses hummus and tomato paste to create a perfectly creamy sauce. I used a brown rice gluten free pasta, but you could use any pasta of your choosing.
This recipe serves 6-7
For the pasta:
1 box pasta of choice
1 tbsp olive oil
1 english cucumber
2 cups cherry tomatoes, sliced in half
2 bell peppers, chopped
½ red onion, chopped
2 tbsp sun-dried tomatoes, chopped
2 cups spinach
For the hummus sauce:
½ cup hummus (plain or a simple flavor)
1 tbsp tomato paste
1 clove garlic
½ tsp pepper
½ tsp salt
To Garnish:
⅓ cup parsley, chopped
⅓ cup feta cheese
Method:
Cook the pasta according to the package instructions
On the stovetop, heat the olive oil, red onion, bell peppers, and tomatoes for about 3-5 minutes to soften
While the pasta is cooking, combine all of the sauce ingredients in a blender or food processor and blend until smooth
When the pasta is done, combine the pasta, sauce, remaining veggies, and spinach together and toss.
Garnish with parsley and feta, and enjoy!
