It is here. These are my number one most made recipe in my house. They are so customizable and easy to add whatever veggies you want! The lemon tahini sauce can be used in other salads, as a dip for veggies, etc.
Serves: 3-4
Ingredients:
1 bunch of arugula
1 bag brussels, halved
1 sweet potato, cubed
1 cauliflower, cut into florets
2 tsp cumin
2 tsp garlic powder
Salt and Pepper
2 cups couscous
½ red onion, finely chopped
1/2 english cucumber, diced
1 cup tomatoes, diced
1 cup feta cheese
1/2 cup tahini
2 tbsp maple syrup
1 lemon, juiced
Salt and pepper
3 chicken breasts
Method:
1. Chop the brussels, sweet potato, and cauliflower into chunks. Toss in olive oil, salt, pepper, cumin, garlic powder, and pepper.
2. Roast the veggies at 400 degrees for about 30 minutes or until slightly brown and crispy.
3. Cook the couscous according to package directions.
4. Chop the red onion, tomatoes, and cucumber.
5. Combine the tahini, maple syrup, lemon, salt, and pepper. Add water as needed to thin.
6. Coat your chicken in a thin layer of cumin, salt, pepper, paprika, and garlic powder. Cook on medium-high heat for about 5 minutes each side or until cooked through.
7. Build your bowl with a base of arugula, dressing, roasted veggies, couscous, tomato, cucumber, onion, feta, and more dressing! Another great addition is some hummus.
