Early Winter Salad


Serves: 8

Ingredients

  • 1 bunch of Tuscan kale

  • 1/2 cup cherry tomatoes, chopped

  • 1/4 cup pumpkin seeds

  • 1/3 cup goat cheese

  • 2 cups rotisserie chicken

  • 2 Japanese sweet potatoes, cubed

  • 1 red apple, chopped

For the Dressing

  • 1/2 cup tahini

  • Juice of 1 lemon

  • 1/3 cup water

  • 1 2 Tbsp Olive oil

  • Pinch of salt

  • 1 Tbsp honey

Method

  1. Chop the kale, potatoes, and tomatoes.

  2. Air fry the potatoes at 425 degrees for 20 minutes, until brown and soft.

  3. Drizzle the kale with a bit of olive oil and a pinch of salt and massage until soft.

  4. Prepare the dressing while the potatoes finish. Combine all of the ingredients into a mason jar and shake well.

  5. Massage 1/2 the dressing into the kale.

  6. Add in the chopped tomatoes, pumpkin seeds, chopped apple, chicken, and goat cheese.

  7. When the potatoes are done, mix them into the salad.

  8. Top with extra dressing and serve!
