Serves: 5-6
Ingredients:
1 Rotisserie chicken
3/4 cup Greek yogurt
1/3 cup chopped celery
1/3 cup chopped yellow onion
1/3 cup chopped carrots
1/2 cup grapes, sliced
2 tbsp mild curry paste (or 2 tsp curry powder)
2 Tbsp mango marmalade
Salt and pepper
Butter lettuce
Method:
Combine all of the ingredients in a large bowl.
Mix well to combine
Spoon 1/2 cup of mixture into your lettuce boats and enjoy!
