These crispy black bean tacos are paired perfectly with a green cilantro lime sauce. The sauce alone makes this recipe so worth it. Bonus is that it comes together in just about 20 minutes! I loved serving these with a side of fish for some extra protein.
Serves: 6-8
Ingredients:
1 can black beans, rinsed and drained
⅓ cup medium salsa
2 ½ tbsp taco seasoning
6-8 small tortillas (flour)
3 tbsp olive oil
½ cup green onion, chopped
½ cup cilantro
Juice of 2 limes
½ avocado
2 cloves garlic
Salt and pepper
Water as needed to thin the sauce
Method:
1. Combine the black beans, salsa, and taco seasoning in a food processor.
2. Pulse until a dough-type texture forms.
3. Add the mixture to a skillet with a drizzle of olive oil and heat for about 5 minutes on medium heat.
4. In a food processor (or blender), combine the olive oil, green onion, cilantro, lime juice, avocado, salt, and pepper. Blend until a sauce forms. Add water as needed for consistency.
5. Spread the black bean mixture onto half the tortilla and fold it in half. Repeat for all of the tortillas.
6. Heat some avocado oil or butter in a skillet and pan-fry the tortillas with the filling until flat and golden.
7. Serve the warm, crispy tacos with the fresh green sauce, and enjoy!
