Now that it is finally starting to get warmer, this cowboy caviar is such a crowd pleaser. The mix of colorful veggies and beans makes a really fun mix. I love eating this with some tortilla chips or adding it to some greens with chicken to make a Mexican style salad.
Serves: 8-10 (more as a dip!)
For the base: 14 oz can of black beans, drained and rinsed 14 oz can of pinto beans, drained and rinsed 14 oz can of sweet corn, drained and rinsed 1 red bell pepper, chopped 1 yellow bell pepper, chopped 1 green bell pepper, chopped ½ large red onion, chopped (or 1 medium, chopped) 1 jalapeno, seeded and chopped 2 avocados, chopped 1 cup feta cheese For the dressing: ½ cup olive oil Juice of 3 limes 3 tbsp red wine vinegar 2 tbsp honey Salt and pepper ⅓ packet taco seasoning
Method: 1.Chop all of your base veggies and add all of the ingredients to a large bowl 2.Shake together the salad dressing ingredients in a mason jar 3.Combine the base and the dressing and enjoy with tortilla chips or with some chicken, salmon, or ground beef/turkey!
