Sometimes I want a brownie but want to add a bit of a healthy spin to it! These chickpea brownies are so fudgy and delish. I have also made black bean and sweet potato brownies and have yet to decide which one I like best. All of the ingredients come together in a food processor to form the batter, so only one dish to wash! (Well, plus the pan). Let me know what you think of these!
Serves:12 brownies
Ingredients: 2 cans garbanzo beans, rinsed and drained 1 cup tahini or another nut
butter you prefer, unsalted 1 tsp vanilla extract 1 tsp baking soda ⅓ cup coconut sugar ⅓ cup maple syrup ¼ cup almond milk ¼ cup cacao powder Pinch of coarse sea salt ½ cup chocolate chips (optional)
Method:
1.Preheat the oven to 350 degrees F
Add all of the ingredients, minus the chocolate chips, to a food processor and pulse until all of the ingredients form a batter
2.Mix in half of the chocolate chips
3.Spread the batter into a greased baking dish
4.Top with chocolate chips
5.Bake for about 35-45 minutes
6.Top with ice cream, nut butter, or enjoy by themselves!
