Chicken Salad Scoops

Serves: 6-8

Ingredients:

  • 1 rotisserie chicken

  • 1/2 cup chopped celery

  • 1/2 cup chopped red onion

  • 1/3 cup chopped walnuts

  • 1/3 cup sliced grapes

  • 3/4 cup plain Greek yogurt

  • 1 tsp salt

  • 1 tsp pepper

  • 2 tsp cumin

Method

  1. Add your shredded rotisserie chicken, celery, red onion, walnuts, and grapes into a large bowl.

  2. Combine your yogurt and spices, and then add to the chicken mixture.

  3. Mix well and add more seasonings or yogurt as necessary.

  4. Either using a scooper or a large spoon and your hands, form the mixture into balls.

  5. Serve on toasted bread, with crackers, over a salad, or plain!
