I made these brown butter pistachio chocolate chunk cookies for my best friend's birthday, and I am never making cookies without brown butter again. They gave the cookies a nice subtle toffee flavor.
Serves: about 12 cookies
Ingredients:
½ cup unsalted butter
½ cup white sugar
¾ cups brown sugar (doesn't need to be packed)
1 egg
1 tsp vanilla extract
1 ⅓ cup AP flour
½ tsp baking soda
1 bar of dark chocolate, chopped into chunks
Heavy pinch of salt
¼ cup pistachios, chopped
Method:
Preheat the oven to 350F
Heat butter in a saucepan on low heat until browned. Be careful not to burn it. Remove from stove and add in the white and brown sugar. Mix well.
Add the egg and vanilla to the bowl and whisk.
Sift in the flour, baking soda, and salt. Fold to combine.
Fold in the pistachios and chocolate.
Form the dough into balls on a lined baking sheet and bake for about 12 minutes or until the edges begin to brown.
Top with Maldon sea salt (or flakey sea salt) and enjoy! I love these with some vanilla ice cream too:)
