Some days I really just want dessert for breakfast. With these cookies, you can get the best of both worlds! Loaded with oats, peanut butter, bananas, blueberries, and healthy seeds, these cookies have all the fuel you need. I love to eat these in the morning on top of yogurt or for dessert topped with vanilla ice cream and honey.
Serves: 10-12 Medium Cookies
Ingredients:
2 ripe bananas, mashed
2 cups oats
½ cup natural peanut butter
2 tbsp flax seed meal
2 tbsp chia seeds
½ tsp cinnamon
¼ cup honey
Dash of salt
½ cup blueberries
Method:
1.Preheat the oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
2.Combine all of the ingredients, besides the blueberries, in a large bowl
3.Once thoroughly combined, fold in the blueberries gently
4.Scoop out large spoonfuls of the batter and form into cookie shapes on a baking sheet
5.Top with more blueberries as desires
6.Bake in the oven for 10-12 minutes (I think my latest batch took closer to 13/14 minutes)
7.Remove from the oven and let cool for at least 10 minutes.
8.Enjoy these delicious cookies for breakfast or dessert! I highly recommend them with vanilla ice cream on top:)
