Blueberry Oatmeal Pancakes

Breakfast for dinner anyone?? These blueberry oatmeal pancakes really hit the spot this week when I made breakfast for dinner. To make these delicious pancakes, you just combine everything in a blender and cook on the stove! They are perfect for breakfast or dinner:) You could also use any fruit you want in these and top with peanut butter, maple syrup, nuts, etc.

Serves: 2

Ingredients:

  • 1 cup oats

  • 1 banana

  • 1 egg

  • 1 tsp cinnamon

  • 1 tbsp chia seeds

  • ¼ tsp baking powder

  • ½ tsp vanilla extract

  • Pinch of sea salt

  • Avocado Oil for cooking

  • ½ cup blueberries

  • ⅓ cup frozen berries



Method:

1. Combine all ingredients in a food processor or blender until a batter forms.

2. Mix in ½ cup fresh blueberries.

3. Heat 1-2 tbsp avocado oil in a skillet.

4. Pour about ⅓-½ cup portions of the batter into the pan top and cook until both sides are golden.

5. In a saucepan, heat ⅓ cup of frozen berries and a small drizzle of maple syrup or honey.

6.Pour the warm berry jam over the pancakes and enjoy!
