These apple samoas are the perfect mid afternoon treat now that it is getting warmer too. They have a great mix of coconut, almond butter, and maple syrup to add some sweetness. I recommend getting unsweetened coconut shreds too!
Serves: about 6 apple slices
Ingredients:
1 red apple, sliced
1/2 cup coconut shreds (unsweetened)
1/2 cup almond butter
1 tbsp maple syrup
1/3 cup dark chocolate chips
1/2 tsp coconut oil
Method:
1. Slice the apple into rounds and remove the core
2. Combine the coconut, almond butter, and maple syrup
3. Layer the coconut mixture onto the apple slices
4. Microwave the chocolate and coconut oil in 30-second increments until runny (shouldn’t take more than 1 min)
5. Drizzle the chocolate on the apple slices, let cool, and enjoy!!
